Ingredients
  • 3½ cups all-purpose flour (420g), plus extra for dusting
  • 1 packet (2¼ tsp) active dry yeast
  • 1 cup warm whole milk (240ml), 110°F
  • ¼ cup granulated sugar (50g)
  • 1 large egg, room temperature
  • 3 tablespoons unsalted butter (45g), melted and cooled
  • 1 teaspoon fine sea salt
  • 2 tablespoons melted butter for brushing
Instructions
  1. In a large mixing bowl, whisk together warm milk, sugar, and yeast. Let stand for 5 minutes until foamy and bubbly.
  2. Add the egg, melted butter, and salt to the yeast mixture. Whisk until well combined.
  3. Add 3 cups of flour and mix with a wooden spoon until a shaggy dough forms. Gradually add remaining flour until dough pulls away from sides of bowl.
  4. Turn dough onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic. The dough should pass the windowpane test.
  5. Place dough in a greased bowl, cover with damp towel, and let rise in a warm place for 1 hour or until doubled in size.
  6. Punch down dough and turn onto lightly floured surface. Divide into 12 equal pieces (about 2.5 oz each).
  7. Shape each piece into a smooth ball by tucking edges underneath. Place on parchment-lined baking sheet, spacing 2 inches apart.
  8. Cover with damp towel and let rise for 45 minutes until puffy and nearly doubled.
  9. Preheat oven to 375°F (190°C). Brush tops with melted butter.
  10. Bake for 16-18 minutes until golden brown on top and internal temperature reaches 190°F (88°C).
  11. Brush warm rolls with remaining melted butter and serve immediately.

The secret to bakery-level rolls is creating the perfect environment for rising. I place my covered bowl on top of the refrigerator or in an oven with just the light on – both create that ideal 75-80°F temperature that yeast loves.

If you’re in a hurry, you can do a quick rise by placing the bowl in an oven preheated to 200°F for 1 minute, then turned off. This cuts rising time in half while still developing great flavor!
